The Spiral Goodness – Jalebi

Makes 15 to 20 Jalebis

0.5 cups all purpose flour/maida
1 tsp chickpea flour/besan
1/4 cup yogurt
1/2 cup water (add a few spoons more if required to make it pancake batter kinda consistency)
2 pinches baking soda
2 pinches baking powder
few pinches of turmeric till you get a pale yellow colored water

1) Mix all dry ingredients.
2) Mix yogurt + water
3) Add dry + wet ingredients
4) Mix till get a smooth batter with no lumps
5) Store overnight or 12-16 hours
6) Use a clean ketchup bottle or bottle with a spout
7) Fill the batter in the bottle
8) In a skillet, heat oil or ghee on medium flame (ghee gives better taste ;))
9) Squeeze spiral Jalebis through the bottle anf fry for 1-2 minutes. This is the most fun step. Be creative and make different shapes 🙂
10) Once the Jalebi looks golden in color, remove on a napkin
11) Add the Jalebis to sugar syrup (1 cup sugar + 2/3 cup water + saffron strands + boil till it thickens. Add squeeze of lemon in the end.)
12) Let them sit in for 2-3 minutes till they soak in the sugary goodness and remove in a serving plate.
