Ingredients:
- 8 Mutton chops
- Oil 4-5 tablespoons
- Onions sliced 4 medium (browned)
- 3 chopped tomatoes
- Red chilli powder 2 teaspoons
- Lemon juice 1 tablespoon
- Garam masala powder 1 teaspoon
- 2 tbsp cumin-coriander powder
- 2 tbsp cumin seeds
- 1 big star anise
- 5-6 cloves
- 3 big black cardamom
- 5 green cardamom
- 1 mace
- 3 small cinnamon sticks
- 8-10 black pepper cons
- 3 bay leaves
- 4-5 garlic cloves
- 1.5 inch ginger
- 3 green chillies
Method
Step 1 – Clean and wash the mutton chops thoroughly. Pat it dry with paper towel.
Step 2 – Heat Oil. Add all dry spices. Add ginger garlic green chilli paste. Add tomatoes and browned onions. Once its cooked well, you will notice the oil separates from the mixture. At this time, add the powdered spices and salt.
Step 3 – Now saute your mutton chops in this gravy for 10-15 mins.
Step 4 – Once the color of the chops changes i.e they become brown, add 1.5 – 2 cups of water and stir well.
Step 5 – Cover the cooker and cook over medium heat till pressure is released 15 times (15 whistles). Note: If the whistles come are very frequent 15 is a good number. If whistles are sparsed, 7-9 should be a good number.
Step 6 – Remove from heat and let the pressure reduce.Remove the lid and simmer till almost all the gravy dries up.
Step 7 – Sprinkle lemon juice and fresh coriander
