Lemon Tartlets:
Ingredients: Makes 15-20 tartlets
Lemon juice from 2 lemons
Zest from 1 lemon
1 to 1.5 cups of sweetened condensed milk
Vanilla essence few drops (Optional)
Phyllo dough tartlet shells (1 box = 15 tartlets)
You can use pie shells or graham cracker pie shells instead as well.
Method:
1) Thaw the tartlets for 5-10 mins at 350 F pre-heated oven. Watch this step as you don’t want the tartlets to burn. Remove and let them cool at room temperature.
2) Blend in a mixer or hand blender rest of the ingredients
3) You will notice that the mixture becomes thicker as you blend it together.
4) Fill this into tartlets and refrigerate for 30 mins or so before serving.
5) Garnish with lime zest for color contrast
Chocolate Tartlets:
Ingredients: Makes 15-20 tartlets
1 cup milk chocolate chips
1/2 cup bitter sweet chocolate
1 cup heavy cream
Raspberries for garnish
Method:
1) Heat 1 cup heavy cream in microwave for about 1.5 mins
2) Pour the chocolate chips in this hot cream and let them sit for a minute before stirring.
3) Start stirring this mixture till it becomes all one.
4) Let it cool down to room temperature
5) Fill this mixture into tartlets
6) Garnish with raspberries
7) Refrigerate for 30 mins or so before serving
